History of Fruit Paste :

Fruit Paste is a confectionery product made from fruit cooked with sugar. Cast in a mould and then cut into a rectangle or square, it was originally a method of preserving the flesh of the fruit, just as can be done with the famous candied fruit of Apt.

The invention of fruit paste dates back to the 10th century, although the mention of fruit paste dates back to the 15th century around Clermont Ferrand.

Nowadays, fruit paste is mainly made in Provence.

 

Recipe for fruit paste :

There are many types of fruit jellies, the most common being quince jelly, apricot jelly, raspberry jelly, strawberry jelly...

To make a fruit paste it is best to use fresh fruit. It is the sugar that preserves the pureed fruit. During the cooking of the fruit paste, the fruit and sugar mixture should thicken without caramelising. After two or three days of drying, the fruit paste is removed from the mould and cut into the desired shape.
