A traditional Provençal biscuit, the gibassié is, according to Frédéric Mistral's Le Trésor du Félibrige (1830-1914), a crunchy shortcrust cake or "craquelin". It is made from candied fruit, almonds and olive oil.

Ingredients: Wheat flour, butter, candied fruits 15%, (orange peel, cherry, lemon peel, pineapple, glucose syrup, water, cane sugar, concentrated lemon juice), sugar, eggs, almond powder 5%, olive oil 5%, flavouring, fleur de sel.

Aix gibassié

The gibassié Aixois is an integral part of the thirteen Provençal desserts, it can be replaced by the pompe à l'huile which is in fact softer and must be made with olive oil too. Traditional Provencal recipe.

This is the only dessert that divides the people of Provence. Indeed, depending on the town and village, the recipe varies and the gibassié is more like a brioche than a hard, crunchy biscuit that keeps for a very long time and is sold in the region of Lourmarin, for example (in the Luberon) and all around Aix-en-Provence. This biscuit, when it is brioche, is called the pompe à huile and can only be kept for a few days.
