Quince paste is a confectionery preparation made by cooking quince and sugar. It is originally a process for preserving the flesh of the fruit.

Quince paste has a visco-elasto-plastic consistency, pasty as its name suggests. It is often cut into pieces for consumption. It can then be covered with sugar, particularly to harden it and prevent it from sticking to the fingers.

The quince tree is native to Asia Minor and the Caucasus. The Greeks and Romans brought this fruit to the Iberian Peninsula. They ate the fruit cooked and sweetened with honey. The Romans also used it to make a liqueur of orujo (alcoholic drink), red wine and quince.

Quince paste is made by cooking quince pulp mixed with about the same amount of sugar. Quince jelly can be made from the liquid part in the same way. The filtering of this jelly is called cotignac.

There are many other fruit pastes: apricot, apple, pear, raspberry, etc. Quince paste is one of the most widespread.
