Recipe of Mendiants with Fruits nuggets from La Maison du Fruit Confit

For 4 persons

  • 300g of dark, white or milk chocolate
  • 3g of butter
  • 30g of fruit nugget from La Maison du Fruit Confit
  • 20g of almonds, nuts or pistachio

Specific ustencils:

  • a cooking thermometer
  • a muffin tin


  1. Dissolve the chocolate in a bain-marie at 45°C. Once the chocolate temperature is risen at 45°c, cool it until 34°C in another bain-marie of cold water.
  2. Spread the chocolate in a tin of muffin, nearly one soup spoon and 5 or 6 fruit nugget per almond, nut or pistachio mendiant.
  3. Let it cool and solidify in a dry and fresh place.
  4. Peel off the mendiants with fruits nuggets and enjoy it or offer it in beautiful holder.
