Cherry Quiche Recipe with Amarena Cherries

Caille laquée aux Cerises Amarena

Ingredients : ( for 4 people )

  •     4 quails
  •     3 tbsp sour cherry jam
  •     1Kg Amarena Cherries APT Fleurons
  •     1 tablespoon of soy sauce
  •     1 small onion
  •     1 tablespoon liquid honey
  •     2 tablespoons olive oil
  •     150 mL of white wine
  •     2 pinches of salt
  •     4 slices of bacon

Preparation :

Salt and pepper the inside of the quail.

Stuff the quail with the amarena cherries and the cherry jam.

In a bowl, combine honey, jam, olive oil and soy sauce. Finally add a little wine and whip.

Pour this mixture over the quail. Shoot them in the marinade and leave in the refrigerator for at least 4 hours, turning them regularly.

In a frying pan, sauté a small chopped onion, brown the quails on all sides, deglaze with a little white wine.

Roll each quail into a slice of bacon and place on a baking sheet and bake for 15 to 20 minutes.

Water from time to time with the marinade. Remove the quail and keep warm.

Serve the meat with a few salad leaves and sprinkle with amarena cherries.
