Ingredients: Almonds - candied melons (melons, glucose-fructose syrup, sugar) - sugar - glucose-fructose syrup - egg white - candied orange peels (orange peels, glucose-fructose syrup, sugar) - unleavened bread (potato starch, sunflower oil) - natural flavourings (quinine).
May contain traces of nuts.

History of Calisson :
The origin of the calisson is little known. One of its oldest explanations dates back to the 12th century, with a text in medieval Italian Latin using the term calisone to designate a cake of almonds and flour. The Italian writer Martino Canal also mentions a speciality called "calissons "2 in his Chronicle of the Venetians of 1275. This confection was later found in Venetian territorial possessions, such as Crete, made of almond paste and walnuts to which various spices such as cinnamon and cloves were added
What is a calisson?
Calisson is a confection made from candied melon, candied orange peel and almonds crushed together, covered with a royal glaze, placed on a base of unleavened bread. Scented with orange blossom, this confection is an essential part of the 13 desserts. It has been a speciality of Aix-en-Provence since the 15th century, where it has a PGI.
Recipe for Calisson :
Based on candied melons, which come mainly from Apt, blanched almonds and orange peel: this pastry is placed on a sheet of unleavened bread made of potato starch and water and covered with a glaze of egg white and icing sugar, also known as glace royale.
It is shaped like an almond with the help of a cookie cutter and then cooked over a very low heat. This speciality is prepared with rather expensive ingredients and its preparation is long, which explains its relatively high selling price for a confectionery.
